I LOVE meatloaf. This version is a hybrid, with a few twists of my own, of my Great Grandma Geist's recipe and the Pioneer Woman's recipe. Hmmm...does that make it my own? I think it does...MY very first recipe!
Mix the following together:
1 pound ground beef
1/2 cup bread crumbs
1/2 cup milk
1/2 cup grated Parmesan cheese
1 Tablespoon dried onion
1 teaspoon Cajun seasoning
black pepper
1 egg, beaten
Mix thoroughly with hands and shape into a loaf.
Cut 3 pieces of bacon in half and place on the meatloaf.
Spicy Sauce:
1/2 cup ketchup
1/2 cup tomato sauce
3 Tablespoons brown sugar
1 Tablespoon Worcestershire sauce
Tabasco and red pepper flakes to your liking. I used a lot of both!
Put half of the sauce on the meatloaf and bake in a 350 degree oven for 45 minutes.
Remove from oven, drain grease if necessary, and add remainder of sauce.
Bake for 15 more minutes.
Once again, a lazy side dish, frozen tater tots, but the meatloaf was so darn good it didn't even matter!
